Hye Meadow Winery seeks pristine fruit and works closely with skilled growers to select the very best. In addition, the production team sorts all fruit before and after destemming and/or crushing.
All white wines are gently pressed, and generally fermented in stainless steel tanks to control the temperature. They will ferment to dryness, and spend several months on the lees, either in tank or stainless steel drums.
Hye Meadow red wines are de-stemmed into small bins and punched down several times daily. Pressing is gentle, and malolactic fermentation occurs in the barrel using less than 30% new oak in any given lot. Racking and fining are variety and lot specific, as are élevage and bottling.

During the tour, you will be able to get an inside look at our barrel room and production facility; where grape juice becomes wine. Led by a member of our wine-making team, our 1 hour tours provide an in-depth look at the art and science of wine.
After your tour all about how our wine is made, you get to follow-up with a Premium Tasting specialized to your tour that will allow you to use your new skills in a guided tasting. This tasting includes 5 wines from our award-winning selection (Included in tour price).
Hye Meadow Winery Production and Tasting tours, which are $40 per person or $20 for club members, include an exclusive tasting of our in-process vintages from barrel and/or tank along with an elevated Tasting specialized to your tour.
Tours are offered Friday and Sunday during hours open; as well as, Saturday after 3:00 p.m. All appointments need to be made at least 24 hours in advance.
- Tour will be limited to 6 people to allow for a more personal experience.

- Tours may not be available during peak production times usually between September through October.
- Due to the nature of the tour, children and guests under 21 are not allowed.
